Roasted Za’atar Chicken Wrap

  • Add the olive oil, zaatar spice, garlic powder, salt, pepper, and paprika to the bowl. Now combine all of the ingredients.
  • Place the chicken breasts on the baking sheet. Rub the zaatar mixture over the chicken breasts.
  • Cook for 20 minutes, or until the chicken reaches an internal temperature of 165°F. 
  • After roasting, place the chicken on a dish to rest.

  • Arrange the chicken, tomatoes, cucumber, red onion, chopped parsley, and crumbled feta cheese in the heated tortilla.

BBQ Chicken Wrap

  • Combine the chicken, cilantro, cheese, salt, pepper, and BBQ sauce in a mixing bowl. 
  • In a nonstick skillet, heat the oil over medium heat. Cook the chicken and set it aside.
  • Place the lettuce leaves in a wrap, followed by the cheese, BBQ chicken, and tomato slice.
  • Place it in the pan, securely wrapped. Warm the wrap by cooking it and pressing it.
  • Serve the BBQ Chicken Wrap at room temperature or cold.

Chicken Shawarma Wrap

  • Marinate the chicken: In a large mixing bowl or a ziploc bag, combine all marinade ingredients. Dry the chicken and coat it with the marinade. Chill for 30 minutes to an hour, covered with plastic wrap or a plastic bag if using.
  • Take the chicken out of the marinade and brush off any excess. In a large skillet, heat 1 tablespoon olive oil. Cook until the chicken is no longer pink, about 3 minutes per side, over medium high heat. Remove the chicken from the pan and set aside for 5 minutes to rest. After resting, thinly slice and store in a warm area. Wipe out the pan.
  • In the same pan used for the chicken, heat another tablespoon of olive oil. Cook until the red onion is softened, about 3-4 minutes, over medium high heat. Set aside after removing from the heat.
  • In a large mixing bowl, add cucumber, tomatoes, feta, kalamata olives, parsley, mint, and olive oil while the chicken is cooking. Season with salt and pepper to taste. Place aside.
  • In a small bowl, mix together all of the tahini sauce ingredients except the water. At first, the tahini will be extremely thick. While whisking, carefully drizzle in the water to thin it out. Season with salt and pepper to taste.
  • Assemble the covers as follows: Divide the chicken and onion between the two hot pitas evenly. 
  • Serve with the cucumber-tomato combination on top. Drizzle with tahini sauce to finish. Add more fresh mint, parsley, and ground black pepper to taste. Serve right away.

Chicken Ranch Wrap

  • Spread the tortillas out on a clean, level table. On each tortilla, layer 1/2 cup chicken, 1 tablespoon ranch, 2 tablespoons cheese, and 1 tablespoon chopped cilantro. Form a burrito by folding the paper tightly.
  • Preheat a large skillet or grill over medium heat. Coat the wraps lightly with oil or frying spray and heat for 1-2 minutes on each side, or until the tortilla is crispy and golden. Remove from the heat, cut in half, and serve right away.


Use cooked rotisserie chicken, leftover chicken, or grilled chicken seasoned with your favorite spices for the chicken. I season my chicken with a spoonful of fajita spice and grill it in a hot skillet for 5-6 minutes per side, or until done.

Cashew Chicken Wrap

  • Prepare the filling. Toss together the cooked and diced chicken, cabbage, bell pepper, carrots, cashews, and snap peas in a large mixing dish.
  • Dressing is optional. Drizzle the vinaigrette dressing over the top of the filling and toss to mix.
  • Layer the tortilla. Place one romaine leaf on each tortilla.  Then top each lettuce leaf with a heaping scoop of the chicken cashew mixture.
  • Roll. Wrap with toothpicks if required.
  • Toss together cooked and diced chicken, cabbage, carrot, bell pepper, cashews, and snap peas in a large mixing dish. 
  • Toss the salad with the dressing to mix.
  • Place one romaine leaf on top of each tortilla. 
  • Top with a generous scoop of the chicken cashew mixture. 
  • If required, roll into a wrap and fasten with toothpicks.

Balsamic Chicken Goat Cheese

  • Combine the chicken, honey, whole grain mustard, garlic, kosher salt, black paper, and garlic in a mixing dish. 
  • Heat the oil in a nonstick skillet over medium heat. Cook the marinaded chicken for 5 to 7 minutes on each side.
  • Cut the chicken into 14-inch thick slices.
  • Fill the tortilla with arugula, lettuce, chicken, goat cheese, balsamic sauce, and cranberries.
  • Tightly wrap the tortilla.
  • It is now ready to serve. Serve the Balsamic Chicken Goat Cheese Wraps chilled or at room temperature.

Curry Chicken Lettuce Wrap

  • Heat the oil in a nonstick skillet over medium heat.
  • Add the ground chicken to the pan and break up the meat with a spatula.
  • Now add the garlic, fresh thyme, garlic, and onion.
  • Mix in the tomato paste as well.
  • Finally, add the pepper, cumin, and curry powder.
  • Reduce the heat to medium-low and add the chopped scallions.
  • Wash and dry the lettuce leaf before adding to the mixture.
